The Green Power Super Crunch Salad

Luke Baylis serves up a super simple salad that’s full of flavour and green goodness with added macadamia nut crunch. Dish it up as a fresh bright side or a flavour packed main.

Steamed Vege Salad with Goat’s Curd and Macadamia 


  • Asparagus
  • Broccolini
  • Snow peas
  • Macadamia (two handfuls)
  •  Zucchini (2)
  •  Shaved coconut (2 tablespoons)
  •  Dukkah seasoning (1 tablespoon)
  •  Coconut oil (1 tablespoon)
  •  Goat’s curd (2 tablespoons)


  1. Blanch asparagus and broccolini  in boiling water for 2 mins, drain, run cold water over the top to stop cooking.
  2. Use Veggetti tool for raw zucchini.
  3. Cut raw snow peas into thin strips.
  4. In a separate pan, place coconut oil, macadamia nuts, Dukkah and coconut flakes, sauté for 10 mins or until golden brown (make sure you continually stir).
  5. Put all ingredients in a bowl, and garnish with goat’s curd.
