Recipe: Moroccan Roasted Sweet Potato Salad

There are a few reasons why we are loving sweet potatoes this spring! Not only are sweet potatoes readily available, inexpensive and tasty, but they also have a number of health benefits which make them more nutritionally awesome than ordinary white potatoes.

Some of the great (and tasty) benefits include:

  • High in vitamin B6 which is needed for brain function, serotonin production (for mood) and melatonin production to help regulate our body clock.
  • High in fibre so you feel fuller longer. They contain almost twice as much fibre as any other potato.
  • Great source of vitamin C which is great for immunity, digestion, collagen production, and helping your body fight toxins.
  • High in carotenoids (better known as Vitamin A) which are very important and potent antioxidants. They are used internally to help protect your skin from the sun by both reflecting and reparing cell damage. One medium sweet potato provides enough Vitamin A for your body’s recommended daily allowance and then some!
  • High in iron, potassium and manganese

Sweet potatoes are also very versatile, great for roast dinners, spring salads and general baking.

Moroccan Roasted Sweet Potato Salad

Serves 4 

What you will need

2 Large sweet potatoes

Moroccan spice

Sea salt & pepper 

Olive oil 


1. Preheat oven to 180 degrees Celsius 

2. Cut potatoes in half length ways, then cut into large wedges, place onto a baking tray

3. Coat potatoes with Moroccan spices, salt and pepper to season and drizzle with olive oil (add chilli or onion for more flavour if you like!)

4. Put in oven and bake for 20 mins 

5. Take out and flip potatoes over to get even colour, cook for a further 10-15 mins until nicely golden brown all over

6. Take out of oven place sweet potatoes into serving bowl 

7. Enjoy 😄
