Recipe: Keto Friendly Pesto Chicken Salad

Our head chef Kim Wiggins shares the recipe for this SumoSalad classic.  This is the perfect way to use up any leftover chicken , low in carbohydrates and high in good healthy fats (walnuts avocado and feta cheese ) and it’s Keto friendly!

Sumo Pesto Chicken Salad

Serves 2

Pesto Chicken Mix Ingredients
250g cooked and shredded chicken breast
2 tablespoons Pesto Basil Paste

Salad Ingredients
100g Mixed salad leaf
250g Pesto chicken mix
50g Danish white feta
50g Sliced Avocado
10g Walnut Pieces
20 ml Lemon Vinaigrette

1. Combine the cooked chicken with the basil pesto paste and mix well. Season with salt and pepper.
2. In a large salad bowl toss all ingredients together, divide onto 2 plates and serve immediately
