When the days are warmer and the nights longer, who really wants to be stuck in a hot kitchen? Especially when there is an abundance of raw foods that are super delicious and of course, require zero cooking.

The basics: our top raw choices consist of uncooked, unprocessed foods, including fruits, vegetables, nuts, seeds and dairy products. Simple, minimally-treated foods such as sprouted seeds, cheese and fermented foods such as yoghurts, kombucha or sauerkraut can also be included. Think nourishing, whole-foods as close to their natural form as possible.

(Steer clear of anything that’s been pasteurized, homogenized or produced with the use of synthetic pesticides/fertilizers, /food additives!)

Veggie rolls with peanut sauce
Veggie rolls are quick, easy and low in calories to make which is perfect following a long day in the sun. The best part? You can pack them full with an abundance of raw goodness including avocado, bell peppers, carrot, beetroot, tufu and sesame seeds, then pair them up with a dipping sauce for a really delicious go-to meal. The combination of crisp and crunchy veggies in a wrap with a sweet peanut sauce is pure heaven!

Zoodle bowls
Making pasta from veggies is a great way to keep your meals cool and fresh during summer. One of our go-to ingredients is the zucchini noodle aka ‘zoodle’. They never make you feel bloated, are perfect for gluten-free eating and they add a motherload of veggies to your diet. You can also do just about anything with them. We like to add carrots, red bell peppers, purple cabbage, corn, celery and sesame seeds to a zoodle bowl. If you like your food spicy, ginger, onions and jalapeno peppers add that zing to this dish you are after.

Vegan tacos
Raw vegan tacos are crunchy, colourful, and bursting with flavour. Whether you make a dehydrated tortilla to encase the goodness in or just a simple lettuce wrap, the combination of sweet corn salsa & cashew sour cream is delicious. The taco ‘meat’ is made from a mix of nut and seed crumbles, and we think you will absolutely love it! Simply ground nuts into a chunky mixture with spices, add a salsa, an avocado component, cashew sour cream, additional veggies, lots of lime and voilà!

Zucchini lasagne
Want all of the deliciousness of a cooked meal without having to turn the oven on to do so, introducing zucchini lasagne. Just as creamy and flavourful as the real thing, it is made up of layers of thinly sliced zucchini, rosemary infused Brazil nut cheese, tomatoes and avocado basil pesto. We like to also sprinkle a few pine nuts on the top to finish it off. Enjoy!
