Step into the kitchen with the king of salads, Sumo CEO Luke Baylis. Here he shares the recipe to one of his favourite spring salads. Full of fresh nutritious ingredients, this is one recipe you can impress your friends. Perfect for a lazy day or entertaining. As Luke says “it’s easy peasy”, give it a go!

Spring Salsa with Poached Salmon & Green Goddess dressing

Ingredients: 

  • 1 x Fillet of salmon
  • 1 punnet of heirloom tomatoes
  • 4 x fresh basil leaves
  • 1/2 cup of fresh peas (if fresh peas aren’t available buy sugar snaps and slice open and use peas inside)
  • Radish bunch
  • 1/2 avocado
  • Coconut oil spray

Dressing:

  • Bunch of watercress
  • Chobani yoghurt 2 table spoons
  • 1/2 juice of a lemon
  • Salt and pepper

Serves 1

Method: 

  1. Slice tomatoes in half 
  2. Cut radishes in quarters
  3. Dice avocado 
  4. Add peas
  5. Mix salad together 
  6. Spray with coconut oil and over a high heat add salmon to pan skin side down for 5 mins (until golden brown) and turn over. Cook to  your preferred style.
  7. Garnish with basil leaves and dressing

Dressing: 

  1. Put all ingredients in a vitamin or blender
  2. Easy peasy!
